Ingredients
1/2 cup rolled oats 1/2 cup milk (any type you prefer) 1/4 cup Greek yogurt 1 tablespoon honey (or maple syrup) Zest of 1 lemon 1 tablespoon lemon juice 1/4 cup fresh blueberries 1 tablespoon chia seeds (optional)

In a bowl or jar, combine rolled oats, milk, Greek yogurt, honey (or maple syrup), lemon zest, and lemon juice. Mix well until everything is combined.

Gently fold in the fresh blueberries and chia seeds, if using.

Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight, or for at least 4 hours, to allow the oats to soften and absorb the liquid.

Before serving, give the oats a good stir. If desired, add a splash of milk to adjust the consistency.

Garnish with additional fresh blueberries and lemon zest before serving.
